Awake at 3:00 a.m.
Ideally, I could cook a batch of ground beef and freeze it.

But not tonight.
After I have some Honey Greek Yogurt, I can go back to sleep maybe.

Half a ham and fake cheese sandwich, two grape tomatoes, and a few roasted almonds. I’ll have one chocolate macaroon later.

A salami sandwich and a a summer squash I sliced up and roasted drizzled with butter, garlic and cheese. I still have the other half of my roll, I'm not sure whether to eat it or save it for later.
(I'll probably eat it)

Golden, I admire people who can stop at one macaroon

cw Ill rarely have more than one. These ones are very filling so it doesn’t take much willpower. I do have other sweets I might indulge in. I mostly keep it down to one as I do with the chocolate square. But this evening, I blew it and had three squares. Your supper sounds great. I love summer squash. But my innards don’t like vegetables these days. Thank goodness for carrots..

About What's For Dinner - I could use some new recipe suggestions on what to do with a package of chicken thighs. Not overly spicy, mindful of sodium level, and trying to stay as much gluten-free as possible.

JLyn69, chicken cacciatore served over rice, beans (like chickpeas or cannellini), lentils, polenta or potatoes.

There's lots of recipes online for cacciatore and you can add all sorts of other veggies into it. I like to put lots of mushrooms in mine, just a personal preference.

Lyn. I have enjoyed orange glazed chicken thighs. There are a number of recipes online. I simply cooked skinless boneless chicken thighs in a fry pan then add a bit of orange juice with some spices like ginger some soy sauce and let the thighs simmer in the juice to make a sauce/glaxe.

Just for interest, here in Alice Springs it’s southern hemisphere winter, just over or below freezing at night, but lovely lovely summer sun in the daytime. The thermometer says 25C, but in the sun you can get suntanned!
